Job #63946 - Sodexo  is seeking an  Executive Chef (II)  for  Woodland Pond in New Paltz, NY .  This is a 300 Resident Continuing Care Retirement Community ; independent, assisted and skilled nursing care.  We are located in the Village of New Paltz; 75 miles from NYC with easy access to the New York State Thruway. Dining services include: an open grill Bistro, Pub, and Restaurant Style Fine Dining. 


Position oversees food production and meal service in our upscale dining venues.  Critical to your success is the ability to develop teams that work collaboratively on quality food service standards, food  & kitchen safety and sanitation for regulatory compliance, and catering for special events.  Position also works with the dining room manager to oversee; the restaurant, bistro, and grab and the go convenience store.  Position interacts daily with the Client and the Residents to ensure meal satisfaction and to initiate customer service enhancements. Position reports to the General Manager and provides staff training, supervision and support, works with employees to continually improve performance and customer satisfaction; manages dining events with enthusiasm while providing hands-on guidance during resident and client functions in order to produce outstanding dining experiences.


Ideal Candidate Skills, Certification:

Culinary Degree / Trade School Certificate, Servsafe Certificate

Culinary background, inventory management, on-line ordering

Ability to manage 1.5 million in financial volume

Leadership skills to train & develop 50 employees

Detailed knowledge of HACCP and Department of Health Regulations

Computer skills to work in food & labor management systems

Keen attention to detail in food production, service, catering

Ability to prioritize multiple and at times, competing tasks

Ability to train production staff in culinary techniques

Experience; Healthcare / Hospital / Retirement / Senior Dining would be ideal!


Schedule will vary with rotating weekend / holiday coverage.

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.


Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
